The process of preparation of mozzarella is known as pasta filata. It involves stretching out, washing and pulling of curds obtained by curdling milk with rennet and cheese culture. While traditionally milk from water buffaloes was used to prepare mozzarella, in the modern times, mostly cow milk is used for the same.

The method of preparation of Emmental cheese begins by obtaining curd from rennet. The curds are then transferred to molds and whey is drained. These molds are left to age and bacterial cultures are added in the maturing process. These bacterias give form bubbles inside the cheese which give it its characteristic hole appearance.

The shelf life of mozzarella varies with its nature. Fresh mozzarella will last in the refrigerator for only up to a week, whereas low moisture can last upto a couple of weeks provided it is packed properly.

Emmental cheese can be stored in the refrigerator for up to 4 weeks. Although you do need to wrap it up properly, first in a parchment paper and then a plastic wrap.
